Today I looked at Vowel Harmony (also called vowel assimilation, i.e., the front vowels (e, é, i, í, ö, ő, ü, ű) or back vowels (a, á, o, ó, u, ú) being consistent within a word), which is a characteristic of the Altaic or Uralic language families. In short, the vowels are either all front or all back.

What does the high and low of vowels mean?

What this actually refers to is the height of the tongue (or the size of the opening) when pronouncing, for example the pinyin i, u, ü are high, while the pinyin a is low.
